What is in this tin of peeled tomatoes?

Whole peeled tomatoes at 60% and tomato juice, both organically grown and raised in Italy. No added sugar, no acidity regulator, no preservative. The Kazidomi tin weighs 400 g, a size that leaves little standing once the tin has been opened.

Should they be used whole or crushed?

Either works. Crushed by hand or with a wooden spoon in the pan, they give a rustic sauce with pieces in it; blended, a smooth coulis. Kazidomi peeled tomatoes also go in whole to a stew or a curry, where they break down as the dish cooks.

Peeled tomatoes or cherry tomatoes for a sauce?

The Kazidomi peeled ones, without hesitation: their flesh collapses in cooking and gives an even sauce. Cherry tomatoes stay whole, are sweeter and keep their skins, which suits a pizza, a bake or any dish where you want the tomatoes to stay visible.

Why does this version contain no citric acid?

The Kazidomi recipe stops at the tomato and its juice: sterilising the tin is enough to keep it, with no acidity regulator. The crushed version in the range does contain one. The taste of the peeled tomatoes is therefore a little rounder, without the sharp edge that additive brings.

How do I keep what is left in the tin?

Three days in the fridge, in a covered non-metal container. Before opening, the Kazidomi tin simply sits in a dry cupboard at room temperature. A glass jar does the job perfectly well, and the tomatoes also freeze, whole or crushed, in small portions.
