How do I use it in place of sugar?

It measures out like any liquid syrup. Kazidomi suggests swapping it for honey or maple syrup gram for gram, then adjusting to taste. Its runny texture blends smoothly into a yoghurt, a smoothie, a porridge or a hot drink. Add it towards the end of cooking rather than at the start.

Yacon syrup or maple syrup: what is the difference?

They come from different places. The Kazidomi syrup is drawn from yacon root, a tuber, while maple comes from the sap of a tree. Yacon gives a quieter caramel note that does not cover the other flavours in a dish. Unlike honey, it contains nothing of animal origin.

What is in the jar?

One ingredient: organic yacon root, at 100%. The Kazidomi jar holds 235 g of runny syrup, with no flavouring, no colouring and no second sweetener anywhere on the list. The recipe suits a vegan diet, and no gluten-containing ingredient appears anywhere in it.

Why does the syrup sometimes crystallise?

That is natural crystallisation, common in concentrated syrups, and not a sign that anything has gone wrong. Kazidomi simply advises stirring before use to bring the texture back together. Keep the jar at room temperature, away from heat and damp, and close it properly after each use.

Which recipes take it well?

Hot and cold drinks, yoghurts, fromage blanc, porridges, smoothies, pancakes and baking. The Kazidomi yacon syrup also works drizzled over granola or a fruit salad. In baking it adds liquid to the mixture, so cut back slightly on the other liquid ingredients in the recipe.
