What are chocolate discs for?

Their flat, thin shape melts fast and evenly: the 56% Kazidomi Vrac discs suit coating fruit, homemade truffles, moulded shells or a hot chocolate. They are also eaten as they come. The 500 g bag is served by weight, with no outer packaging.

Discs at 56% or at 70% — which should I choose?

At 56% cocoa, the Kazidomi Vrac disc stays mild and clearly sweet, suited to children and to coatings where bitterness would get in the way. The 70% version gives a fuller taste and a sharper ganache. For a dessert served to a whole table, 56% goes down well with everyone.

What is in the 56% recipe?

Three ingredients, all organically grown: cane sugar, cocoa and cocoa butter. The cocoa comes from Peru. Kazidomi Vrac names no lecithin, no flavouring and no fat foreign to cocoa in this list. At 56%, the share of sugar stays higher than on the stronger versions.

How do I melt them?

In a bain-marie, or in the microwave in short bursts, stirring between each one. Thin and evenly sized, Kazidomi Vrac discs melt faster than a bar broken by hand. Avoid any drop of water and any overheating: the chocolate then thickens into a grainy mass that cannot be rescued.

How do I keep the discs?

Dry, between 12 and 18°C, in a resealed container and away from strong smells. Kazidomi Vrac discs take badly to damp and to temperature swings, which turn the surface pale. The fridge is a poor idea: condensation on the way out dulls the chocolate and sticks the discs together.
