Shredded Coconut in Bulk Organic

Is this grated coconut sweetened?

No. The Kazidomi Vrac bag holds a single ingredient: organic coconut, grated and then dried. No sugar, no syrup and no preservative appear on the label. The faint sweetness on the palate comes from the fruit itself, not from anything added during drying.

Grated coconut or coconut milk for a recipe?

The grated version from Kazidomi Vrac brings chew and a dry texture: it folds into a batter, gets sprinkled, gets toasted. Coconut milk brings liquid and fat to a curry or a creamy pudding. They do not stand in for one another, though grated coconut will make a milk at home.

How do I use it in cooking?

In a cake batter, in coconut macaroons, over a porridge or a yoghurt, in a curry to soak up liquid, or as a coating for fish fingers and tofu. Toasted for two minutes in a dry pan, the Kazidomi Vrac coconut turns golden and tastes markedly more roasted.

How do I store it?

In an airtight jar, dry, away from heat and light. Grated coconut remains a fatty product and goes rancid if it sits in the open air. The 500 g Kazidomi Vrac bag is worth decanting as soon as it is opened; a smell of paint marks a batch to set aside.

Where does it come from?

Sri Lanka, from organic farming. The coconut flesh is grated there and then dried, with no further treatment and no other ingredient on the label. Kazidomi Vrac sells it loose by weight, which lets you take the amount a given recipe calls for rather than a pack sized in advance.
